Ceviche is a dish originated in South America (Peru) that is usually served as an appetizer. It’s usually made from raw fresh fish, shrimp, or other seafood that’s marinated in lime (and/or lemon) juice. The acidity in the citrus cures the fish causing it to become firm and opaque while absorbing flavor.

Easy shrimp ceviche uses pre-cooked shrimp marinated in citrus juices with cilantro, red onion, tomato and avocado. Even ceviche newbies will love it!

Yields1 Serving

 1 lb Shrimp
 1 Avocado
 2 Tomatoes
 ¼ cup Lime Juice
 ¼ cup Lemon Juice
 ¼ cup Cilantro
 ¼ cup Onion
 Salt

Cut the shrimp into 1/4 inch pieces and transfer to a large mixing bowl.

Pour in lime juice and lemon juice. Cover and let marinate 30 minutes.

Stir in cilantro, red onion, tomato, and avocado. Season with a pinch of salt, or to taste. Serve chilled.
